We wanted to create dishes that celebrate that same spirit. Every ingredient, every flavour, and every plate is meant to encourage people to slow down, share a meal and enjoy the company around them just as much as the football.” Few dishes capture the spirit of game day quite like a great burger, and Tracks & Records takes it a step further with its Mexican taco burger, combining two fan favourites in one creation. A flame-grilled, pimento-spiced beef patty seasoned with traditional Jamaican herbs and spices is topped with iceberg lettuce, vine-ripened tomatoes, creamy guacamole, fresh salsa, crunchy onion rings, and melted cheddar cheese, all served on a lightly toasted bun with golden fries. McMaine recommends pairing it with a cold lager, with the clean finish cutting through the richness of the beef and cheese. For those who prefer to graze throughout the match, the Red Stripe Wings bring a distinctly Jamaican flavour to the table. The wings are marinated in a house blend ahead of cooking, allowing the seasoning to develop before they are coated in a glossy glaze made with Red Stripe beer, garlic, butter, honey and a touch of Scotch bonnet. “The wings are marinated in our secret formula before cooking to allow the flavours to develop, creating depth without overwhelming the palate,” shared McMaine. The combination delivers sticky, savoury wings with subtle sweetness and gentle heat, while the beer’s malt character adds another layer of flavour. ULTIMATE SHARING PLATTERFor a crowd that wants a little of everything, the generous sharing platter is loaded with jerked pork, codfish fritters, wings, chicken quesadillas, chicken spring rolls and a selection of dipping sauces. Each element brings something different to the table, from the smoky spice of the jerked pork to the golden crunch of the fritters and spring rolls. Designed for mixing, matching and passing around, it is the kind of spread that keeps everyone reaching for another bite between the action. Every memorable match-day spread deserves a signature drink, and the Red Stripe beergarita puts a playful spin on two familiar favourites. It begins with the classic foundations of a margarita: tequila, orange liqueur, and freshly squeezed lime juice, shaken with ice for a bright combination of citrus, sweetness and tartness. Red Stripe Lemon is then added, bringing a lively lemon finish and a touch of effervescence that lifts the cocktail without overpowering its margarita base. Bartender Jermaine Henry recommends the beergarita alongside the menu’s bolder dishes, where its citrus-forward profile helps cleanse the palate between bites.
