A small childhood pleasure, simple enough to need no recipe. For Esther James, it holds the beginnings of something she hopes people will recognise at this yearâs Barbados Food and Rum Festival. She is keeping the finished dessert to herself for now. The memory behind it, however, is one she is happy to share.
